SPICY ROASTED POTATOES

2 1/2 lbs potatoes, unpeeled, cut into 1 1/2" pieces
2 T. olive oil (you can reduce this for a lower fat dish)
3 T. El's Dry Rub for Beef or Chicken & Pork(any variety)

Preheat oven to 425. Combine rub and oil in large bowl. Toss with potatoes. Transfer potatoes to cookie sheet. Roast until lightly browned, about 45 minutes, stirring several times.
