SPICY BREADED PORK CHOPS
(4 Servings)
4 pork chops (center cut with bone 6-8 oz. each)
4 oz. fresh or stale bread (preferably an herb or rosemary bread but plain old white bread works well, too)
3 T. El's Kitchen dry rub for Chicken & Pork (Spicy or Medium Spicy)
3/4 c. skim milk
3/4 c. flour
Preheat oven to 375 degrees. Spray shallow roasting pan with vegetable or olive oil.
In food processor, blend bread crumbs and dry rub together. Pour bread crumb mixture onto flat pan or baking dish. Put flour and milk in separate mixing bowls.
Coat the pork in the following order: dredge chops in flour; dip them in milk; cover the chops with bread crumb mixture.
Bake in oven for 40 to 45 minutes. Pork is done when the internal temperature is between 145 and 160 degrees (use instant read).
