SPICE ENCRUSTED TILAPIA
(4 - 5 servings)

1 1/2 lbs Tilapia
4 T. Fish Spicy Rub, divided
1/2 c. flour
2 large eggs
1 1/2 c. seasoned bread crumbs
1 T. olive oil
Fresh thyme, optional
Lemon wedges, optional

Rinse fish and pat dry. Mix flour and 1 T. El's dry rub and transfer to a shallow dish. Beat eggs in separate bowl. Mix breadcrumbs and 3 T. El's dry rub; transfer to another shallow dish. Dredge fish as follows: 1) in flour, 2) in eggs, and 3) in bread crumb mixture. Heat oil in 350 skillet. Cook 4 to 6 minutes per side. Top with fresh thyme. Serve with lemon.
