SOUTHWEST MARINATED STEAK

This is so easy. You just need to plan the night before to make this quick marinade.

2 T. El's Kitchen Beef Rub (mild, spicy or not so spicy)
1/2 c. beer (not dark)
1T. freshly squeezed lime juice
2 1/2 lbs flank steak

Mix first 3 ingredients in bowl. Pour in large plastic food storage bag. Add meat and marinate overnight.

Remove meat from bag. Shake off excess marinade. Grill meat over high heat. One minute per side to sear the steak. Turn grill to medium. Cover and grill for about 7 minutes more depending on your tastes, flipping meat over 1/2 way. Use chart below to help you find the perfect temperature.
