ROASTED VEGETABLES
Colorful side dish when entertaining.

1 1/2 lbs fresh vegetables
2 T. Rub (we prefer our Chicken & Pork Rub, either variety)
2 T. olive oil (optional - can substitute cooking spray)

Preheat oven to 450. In a plastic food storage bag, toss all ingredients until rub is well distributed. Empty vegetables into baking dish and bake for 15 to 20 minutes uncovered, stirring several times.

Suggested veggies: red pepper, green pepper, onion, mushroom (portabellas hold up especially well), broccoli, zucchini, yellow squash, carrot.
