GUACAMOLE

This has few ingredients and requires a few more minutes of prep but it's a "guac" that burst with flavor.

1/2 oz. jalapeno pepper
1 oz. of a red onion
1 lg. garlic clove
1 1/2 T. cilantro
4 oz. tomato
2 - 8 oz. ripe avocados
2 t. El's Kitchen Dry Rub for Chicken & Pork Medium Spicy
2 T. lime juice
3 T. sour cream

Remove stem, seeds and ribs from jalapeno pepper. Peel onion and garlic and cut onion into 1" pieces.

Using a food processor and the metal blade chop the pepper, onion , garlic & cilantro until fine, about 10 seconds. Scrape down work bowl. Core and seed tomato. Cut into 1" pieces and add to the onion mixture. Pulse-chop until incorporated, 4 to 6 pulses. Add rub, lime juice and sour cream. (can be made ahead of time and set aside; refrigerate if longer than 30 minutes).

Peel avocados and cut in half lengthwise, reserving pits. Cut each half into quarters and add to work bowls. Pulse 4 times to incorporate, scrape down bowl and pulse 4 more times to coarsely chop.

Transfer mixture to a serving dish and add pits to prevent discoloring.

Note: Recipe can be doubled.
