EL'S CHICKEN CHILI

One of the first recipes to make, its way out of our Kitchen. Always a classic & healthy too!
3 to 3 1/2 lbs. chicken breasts with bone and skin (see note)
1 lg. green pepper, chopped
1 med. yellow onion, chopped
2 cloves garlic, minced
1 T. olive oil
1 - 35 oz. can Italian plum tomatoes, broken up
1 c. water
1 - 6 oz. can tomato paste
2 1/2 T. El's Kitchen's Dry Rub for Chicken & Pork (either "spicy" or "medium spicy")
1 - 15 1/2 oz. can kidney beans, drained
Cover chicken in cold water . Bring to a boil. Simmer for 35 - 45 minutes. Remove chicken from pot. When meat is cool enough to handle remove skin and remove meat from bone. Cut meat into 2 inch pieces.
Saute garlic, onion and pepper in oil in dutch oven. Add chicken, tomatoes, water, tomato paste and dry rub. Cover. Cook slowly 1 to 1 1/2 hours. Add beans. Continue cooking, uncovered 20 minutes.
Note: substitute cooked leftover or rotisserie chicken to make this dish really easy! (Use about 1 1/2 lbs.)
