EL'S BEER CAN CHICKEN
(4 Servings)
1 - chicken (about 4 lbs)
1 - 12 oz can of beer
1/3 cup of El's Kitchen's Dry Rub for Chicken & Pork (either "spicy" or "medium spicy")
Fire up grill.
Sprinkle 2 teaspoons of rub in cavity. Spread the spices by rubbing inside cavity. Carefully lift skin from breasts (careful not to tear off) and sprinkle 2 teaspoons under each skin flap (1 teaspoon per breast). Rub spices onto meat. Sprinkle 2 tablespoons of rub all around the outside of the chicken and rub onto skin.
Drink 1/2 of beer. Add rest of rub to rest of beer in can.
Straddle the chicken over the beer can (the cavity should be over the top of the can). Set chicken and can on grill. Grill for about 90 minutes or until chicken is done (use an oven thermometer to keep the grill at 350 degrees). Dark meat should be 185 degrees, white meat 170 degrees. Watch out removing bird from grill cuz can will be steaming hot!
